Courgettes are over 90% water so..anything other than quick cooking will ruin them.

Try.Griddling courgettes,cut off the ends,then thinly slice lenghways and brush both sides with olive oil.Heat the griddle pan,when hot add the slices and cook for one minute on each side.Goes nice with roasted veggies.
